Menu Plan Monday




Monday 
Shepherds Pie


My mom taught me how to make her Shepherds pie and she doesn't really use a recipe. This is how she  makes hers. It's pretty plain, but we all like it :)

Ingredients:
 1lb ground beef
 1 package onion soup mix
 1 bag of frozen corn
 1 bag of frozen peas
 10 potatoes
 1/4 cup water
 1 onion
Directions:
1. brown ground beef
2. mix in onion soup mix and water into the ground beef
3. add frozen vegetables
4. peal, cook, and mash the potatoes (season to taste) and then layer on top of the beef/vegetable mixture.

Tuesday
Mexican Spaghetti and Mexican Pinwheels
“Anyone Can Do it Chicken Spaghetti” (Mexican Spaghetti)  This one is from my sister in law Shannon.

2 (6 or 8 oz.) cans white chicken

½ Cup chopped onion
½ cup chopped bell pepper
2 (10 ¾ oz) cans cream of mushroom soup
1 ½ cups milk
1 can of Ro-Tel
1 (12 oz) package thin spaghetti cooked
8 oz cheddar (mild) cheese grated
1. In a large bowl, mix all ingredients together in order listed, using only half of the cheese. 
2. Pour into a 9x13 baking dish and spring remaining cheese on top
3. Bake 30 minutes at 350 degrees
*Serve with “Mexican Pinwheels” (recipe below) and chips, salsa, and cheese dip


“Mexican Pinwheels”
Mix together:
8 oz. cream cheese
½ can chopped black olives 
4 chopped green onions
½ jar chopped jalapeño peppers
1 tsp garlic salt
Spread layer over flour tortillas. Roll up and chill one hour. Cut rolls in ½ - ¾  inch pieces. Serve plain or with Salsa.

Pasta with Tomato and Blue Cheese
I didn't get to this one last week because we ended up going to Edinburgh to visit 4 of our old college students from the College Ministry  from Chicago. We had such a nice time with them! Picture to come!
